Fresh Garden Salsa Recipe

Here is the first of many of the Yoder family favorite recipes!  The original recipe came from Dave Disbro but I have changed it adding more flavors and a few extra ingredients.  The salsa isn't cooked or canned, just fresh chopped veggies.  Anyone on a no sugar diet?  No sugar in this recipe!!! Enjoy and share w/ friends.


15 oz can black beans washed & drained
Small bag frozen corn, thawed & uncooked
3 medium tomatoes
1 green pepper
1 red pepper
1 yellow pepper
1 large Vidalia onion
1 long john pepper
1 jalapeno pepper
1 serrano pepper
1 small bunch cilantro (washed & dried)

Wash all veggies and dry. Remove seeds from the peppers and tomatoes. Dice all the peppers in a food processor. Dice tomatoes in a food processor. Dice cilantro in a food processor. Place all ingredients in a large strainer and drain excess liquid from all the diced veggies.

Mix together the following items and pour over diced veggies and store in an airtight container. Refrigerate for several hours or overnight before using.  Serve with tortilla chips.

Juice of 3 fresh squeezed limes (about 1/3 cup)
1/3 cup extra virgin olive oil
1 tsp salt
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp Adobo all purpose seasoning (Goya product)

Will keep about 1 week in the refrigerator.  It's great over grilled chicken breast for a nice quick dinner.
